EFGH designs Dogmatic restaurant in New York


The storefront and interior of Dogmatic Gourmet Sausage System restaurant in New York, designed by New York-based architecture and design practice EFGH Architects, displays aesthetics of the butchery.


The aesthetics of the butchery was the generative approach followed by the architects in designing the storefront and interior of flagship location, the Gourmet Sausage System restaurant on Union Square in Manhattan.

The 600 square feet interior of the restaurant features a 14 inch by 4 inch communal butcher-block table, which is the centerpiece for the space and incorporates retractable cantilevered seating to avoid any freestanding furniture. A raised built-in banquet on the west wall overlooks the restaurant while providing the base for the Sausage Wall-of Fame.

The story of the Dogmatic restaurant is inscribed on a mural, which is baked onto the ceramic tiles using a transfer toner technique.

An 11 feet tall vertical glass menu board screens a portion of the open kitchen and a steel armature hangs from the restaurant hood. Meat hooks assist in supporting the lighting cylinders on tracks.

The custom steel designed storefront doors revolve to permit maximum openness and connection to the outside.
